Here’s How You Can Create Choco Tacos At Home And Make Them Taste Like You Got Them From The Ice Cream Truck

Who else was lowkey devastated when finding out that Klondike was discontinuing the Choco Taco?

The Choco Taco was one of my favorite treats to get from an ice cream truck or snack bar over the summer, and I know I’m not the only one who misses them. 

Thankfully, many food creators have found ways to recreate the Choco Taco at home. One of them is Alex George (@lilypcrumbs), who has made her own Choco Taco recipe and shared it as part of her Ice Cream Truck series on TikTok, where she shows her viewers how to make classic ice cream truck treats at home. 

“When I fed this to my friends, I received such positive feedback,” says Alex in the intro of her video. 

“It was borderline alarming. They liked it better than anything that I’ve ever made before.”

Alex goes all out with her Choco Taco recipe, making the shells, ice cream, and hot fudge from scratch, which she admits is a time-consuming and slightly hectic process that’s easier to get done with help. However, Alex also shares how to make your own Choco Tacos using a few pre-made ingredients. 

However, Alex insists the hot fudge within the Choco Taco must be homemade, as it takes this recipe to the next level. 

Here’s how to make Alex’s homemade Choco Taco!

Homemade Choco Taco Ingredients:

  • 1 pint of any brand of ice cream
  • 1 package Stroopwafel
  • 2 tablespoons cocoa powder
  • 1/3 cup whole milk or heavy cream
  • 5 ounces chopped chocolate (any percentage)
  • 4 ounces chocolate chips
  • 1 tablespoon corn syrup
  • 1 cup chopped peanuts
  • 2 bags of milk chocolate chips

You’ll want to begin your Choco Taco process by microwaving your Stroopwafels individually for 30 seconds or until they’re pliable. Shape them into taco shells and set them aside. If you have a taco holder, it’ll make things a lot easier!

Now it’s time to make the homemade hot fudge. Add the cocoa powder, whole milk, chopped chocolate, four ounces of chocolate chips, and corn syrup to a saucepan and cook on low until you’re left with a homogenous mixture. Transfer the fudge into a freezer-safe container and freeze until it’s mostly hard. This should take around two hours. The texture of your fudge should be similar to firm Play-Doh. Transfer your fudge to your fridge until you’re ready to use it.

Now it’s time to prepare your toppings and assemble your tacos! Melt one bag of chocolate chips in the microwave, and, using a paint or silicone brush, paint some melted chocolate on the inside of the taco shell. Then, let them set in the freezer for 20 minutes. 

Once your chocolate-coated taco shells are set, spoon a small layer of ice cream into the shell. Then, pipe or drizzle your hot fudge over the ice cream layer and repeat this process until the shell is completely full. Don’t forget to smooth out the final layer of ice cream so you can properly top your taco!

Freeze the filled taco shells for at least three hours to let the ice cream and fudge set. Meanwhile, melt your second bag of chocolate chips and chop your peanuts. 

Remove your tacos from the freezer and dip the tops of each taco in the melted chocolate before topping it with a sprinkle of chopped peanuts. Repeat for each taco, and you’re finished!
